Ricotta

Ricotta is produced from whey; a by-product of cheese making. A versatile ingredient and delicious on its own this fresh cheese has a slightly sweet taste, and contains a low 13% fat. Like many fresh cheeses it is highly perishable and is best eaten within a few days of opening the container.
